| Eel | 450gm |
| Shallot, skinned | 9 cloves |
| Garlic | 6 cloves |

| Dark Soy Sauce | 1 tablespoon |
| Shaoxing Wine, Granulated Sugar | 1 teaspoon |
| Salt | 1/4 teaspoon |
| Water | 1/2 cup |
| "Double Happiness" brand sesame oil | 1 teaspoon |
Methods:
Step 1: Blanch eel in hot water and remove slime with a knife. Wash, thickly slice and marinate. Dab with little cornflour.
Step 2: In the inner pot heat 2 tablespoons of oil and saute eel until slightly golden. Add shallot and garlic and stir fry until fragrant.
Step 3: Pour in seasoning, bring to boil and cook for 2 minutes. Transfer the inner pot to the outer one and cook for 10 minutes.
